Grilling Tri-Tip Two Ways for the Perfect Family Dinner!

Ingredients
Ingredients:
2 Tri-tips, approximately 4lbs each
Marinades
1 bottle red wine, we used a red blend we love
3 T finely diced garlic
Cattleman’s Grill California Tri-Tip Seasoning
1 cup Sweetwater Spice Ancho Chipotle Brisket Brine
3 cups Water
Cattleman’s Grill 8 Second Ride
Directions:
For the first Tri-Tip:
1. Place one 4lb Tri-Tip into a briner bucket or 1 gallon Ziplock bag. Add the diced garlic and enough red wine to ensure the Tri-tip will remain fully submerged and seal. Place into refrigerator for at least 8hrs (we normally marinade 12-16).
For the second Tri-Tip:
1. Place one 4lb Tri-Tip into a briner bucket or 1 gallon Ziplock bag. Add 1c of the Sweetwater Spice Ancho Chipotle Brisket Brine and 3 cups of water and seal. Place into refrigerator for at least 8hrs (we normally marinade 12-16).
Prep for smoking:
1. Pre-heat the smoker to 275°F. If you are using a charcoal or gas grill, set the grill up for off-set cooking.
2. Remove the Tri-Tip from the marinade/brine.
3. For the Wine and Garlic marinaded Tri-Tip, generously coat each side with Cattleman’s Grill California Tri-Tip Seasoning.
For the Sweetwater Spice brined Tri-Tip, put a liberal coat of Cattleman’s Grill Mexicano seasoning on each side. Once the Mexicano is on all sides, generously coat each side with the Cattleman’s Grill Carne Asada 8 Second Ride seasoning.
4. Place each Tri-Tip on your smokers upper rack near the smoke stack. If using a grill set up for off-set cooking, place the Tri-Tip on the cool side of the grill.
5. Smoke/grill the Tri-Tip until the internal temperature reaches 130° to 135°. Remove from the smoker/grill and let rest, covered with aluminum foil for 20 minutes.
6. Slice the Tri-Tip, against the grain, in 1/4 to 3/8 inch slices. Serve and ENJOY!
