Where does lasagna originate?
Lasagna’s roots trace back to ancient Greece with “laganon” (flat dough strips) and Rome, but the layered, baked dish we know today truly developed in Italy, with the earliest written recipes appearing in Naples and Bologna during the Middle Ages (14th century), evolving into the classic Italian versions with ragù, béchamel, and cheese.

What’s the difference between lasagna and lasagne?
Lasagna (singular, common in U.S.) vs. lasagne (plural, common in U.K.) both refer to the layered pasta dish and its wide noodles; technically, lasagna is one sheet, and lasagne is many sheets, but in English, the spelling varies by region, with Americans favoring “a” and Brits favoring “e,” both often used interchangeably for the dish itself.

What cheese is best in lasagna?
The best cheeses for lasagna are a combination: Ricotta for creamy texture, Mozzarella (low-moisture) for gooey meltiness, and Parmesan (or Pecorino/Romano) for sharp, salty flavor, often mixed with an egg for the filling and layered with more mozzarella on top for that classic bubbly crust. While authentic Italian versions might use just Parmesan with béchamel, the ricotta, mozzarella, and Parmesan trio is the widely favored American-Italian standard. We also like to use the St. Louis staple of Provel cheese!
Ingredients:
Charlotte’s Lasagna
Veggie mixture
1 large onion, finely chopped
2 cups broccoli florets, finely chopped
5 stalks celery, finely chopped
1 red bell pepper, finely chopped
2 cups carrots. shredded
2 small zucchini. shredded
2 small yellow squash, shredded
Cheese sauce
1/3 cup minced garlic
5 eggs
60 ozs ricotta cheese
1 cup grated parmesan cheese
Meat mixture
6 lbs ground beef or pork, cooked and drained (We used the aged ground beef we make ourselves)
48 ozs marinara sauce
3 T basil
4 T Minced garlic
Oven ready Lasagna noodles
1. Chop and shred veggies as directed then allow to drain off excess fluid.
2. Alternate layers of sauce, noodles, veggies, and meat in baking dish.
3. Bake for 40 minutes at 400 degrees F, covered in foil.
4. Remove foil and bake an additional 20 minutes.
5. Let rest 30 minutes prior to serving to allow to set up.
6. Top with parmesan cheese, serve and ENJOY!
